When you have that you can use Alt/Option-Boot to boot from it. Use its Utilities to erase the new SSD, and use its Install function to install on the new drive.

Mac NOT working, but Recovery_HD  works?

MacBook Pro early 2011 is marginal for having Internet Recovery its ROM. There was a firmware update that added it for some 2011 models.

Get an external enclosure that holds the drive while you install Mac OS on it. Use Recovery_HD  (from the old drive) to erase the SSD, then start the download-and-Install. Use this article:

Once installed, run it for a while and make sure all is well. Then when you are ready, move the new drive inside the case. Any problems that develop at that point are due to cables or surgery, and nothing more.
