iPhone Restore 7Plus to X

I have upgraded from iPhone 7 Plus 256Gb to iPhone X 256Gb.

I don’t have Wi-fi at home due to my house being a new build and therefore have to rely on work/family/friends Wi-fi. 

I have over 100Gb of photos/music etc and just wondered how I can tell when the restore has finished so I can set my phone back up to restore when connected to the Wi-fi? I don’t want to backup and lose the restore? (If that’s possible)

It is better to set up the phone as new and then sync it using the USB with your iTunes.
