iTunes won't let me back up iPhone

My boss has an iPhone 6s that he wants to back up in iTunes.  When he connects the phone to his Windows computer, iTunes opens up, but a window comes up saying that iTunes sees this phone as a new iPhone.  It asks if he wants to set up the phone as a new phone, or restore from a backup.  When he selects Cancel, the window disappears, and the phone disappears from the pane in the left.  He just wants to back up the phone in iTunes.  He doesn't want to restore it or set it up as a new phone.  He can't back it up if the phone disappears from iTunes.

Use set up as a new phone. This doesn't change anything on the device, but lets iTunes access it so that it can make a backup. You can then choose whether or not to add media from the computer to the device.
