protecting email during service/new computer setup

We are getting a new Mac and we will have Apple technicians handle the setup of the new computer and also the migration of the data/apps/everything from the old Mac to the new.

I am moving sensitive documents (pdfs, Pages, Numbers docs) off the computer and to an external hard drive for safekeeping.

However, Apple Mail is of course still on the computer. And there are numerous emails with sensitive attachments which are accessible through Apple Mail on the computer (they are on the iCloud).

Is there ANY way I can protect a particular mailbox which is on iCloud?

Or is there a way to move/copy a bunch of emails off of the computer/icloud and onto my external hard drive?

It's always a leap of faith giving the service techs our passwords although nothing has ever happened yet.

Keep solutions simple, please. And don't tell me to do this whole thing myself because that's just not going to happen.

p.s. We are ordering the computer from, and having it set up and data migration done by our local Apple-Authorized Sales and Service company which I have worked with for 11 years. They have unfailingly kept our computers running beautifully and this being a small town, it is very personal service. We just want to be as careful as possible.

So securing/protecting/moving sensitive information (generally legal/financial) is important.

if you trust them to copy over your data, you are trusting them.

Otherwise, have them give you the blank computer and copy the stuff over yourself. It is not difficult, but occasionally is complicated.

Apple recommends you if you have any qualms about this, ERASE YOUR DRIVE when submitting your computer for service:
