HOW CAN I FIND MY ACCOUNT CREDITS AND A LISTING OF HOW THINGS WERE CHARGED?

You can view a list of purchases, and how items were paid for, via your purchase history : See your purchase history in the App Store or iTunes Store on your Mac or PC - Apple Support

You can't view a list of credits to an account.
