Does an iTunes backup restore not only photos, ...

This might sound like a stupid question but as I've never had to restore a new iPhone from my old one's backup, I just wanted to be absolutely sure! I currently have an iPhone 6+ (which is still at iOS9.1, as I have very limited space on my 16GB and haven't been able to update it...), I am getting a new iPhone 8+ soon and I want to be able to transfer not only all my photos (which are all photos that were either taken by the phone's camera or saved while browsing on my phone) but also the albums that I've organized them into. I have about 10k photos and they have all been organized into many albums (which has taken me a lot of time to do) so being able to transfer my albums is something that is extremely important to me. I've backed up my iPhone 6 (and will do so again right before I go out to purchase my new one) onto iTunes, and so I was wondering that when I got my new 8, when I restored my old phone's backup onto my new phone, among everything else, will the albums be restored in the same state as they are on my 6? Or is it just the photos that get restored, and I will have to organize them all over again?
