Sync apple mail and gmail over different platforms

I have 3 email addresses, all hosted by google (one a gmail address and two @mybusiness.co.uk) and use different platforms to access: desktop at work, desktop at home and iphone. Additionally, one of the mybusiness.co.uk email accounts is monitored by staff on a third desktop.

 

My inboxes are not syncing over individual platforms (in the way my gmail account would via the gmail web interface or app). If I work away all day on my office desktop, replying to, deleting or filing emails away, they are all still sitting in my inbox on my phone or on my desktop at home later in the day. This is causing much confusion - what do I do with these - delete them? File them all again? Surely they should sync as they are being stored on google's server? This is what happened when I used the gmail web interface and gmail app on my phone, but moving over to Apple Mail seems to be causing lots of duplication.

 

Is Apple Mail actually downloading emails onto the individual devices? Surely they should stay on the server and only be accessed by each device?

 

Any pointers would be appreciated or it's back to gmail and thier web interface/app
