Set up a new iPhone using existing Apple ID

Hi all,

I have been using an old iPhone 5 ever since it was first launched in 2012, and now finally I decided to upgrade to the upcoming iPhone 8. The thing with that situation is, I rarely touch my iTunes, iCloud and Apple ID at all besides simple backing up. As such, I am right now not quite sure on how to set up my new phone. I want to use my existing Apple ID in the new iPhone but without importing the whole camera roll photos from the old iPhone (I'd still want to import all the existing settings, apps, messages, contacts, etc to the new one).

1) If I set up the new iPhone using iTunes on my PC and restore the data backed up from my old iPhone, is it possible to select individual kind of data to restore to the new iPhone? (As I mentioned, I'd like not to have the entire camera roll photos and videos from the old iPhone in the new one)

2) If I sign in to my Apple ID in the new iPhone (without connecting to iTunes in my PC), is it possible to download all the purchased apps, settings, contacts, messages, etc without the camera roll photos and videos? Subsequently if I do it this way, the next time I connect the new iPhone to iTunes in my PC would it download the photos and videos from old iPhone to the new one? (or even worse -- would doing that erase the backup of camera roll photos and videos stored in my PC iTunes?)

Any other suggestion to solve the concern is also appreciated.

Much thanks beforehand.
