No documents after software update ios11

Since downloading ios11 it appears that the 'documents' have all gone into iCloud which means that if I want to access them while not connected to wifi, I can't!  I used to keep documents both stored and also in 'documents' so I have two ways to access them.  What's more, some are greyed out and I can't open them
