Selecting folder(s) for syncing

Hi there

iMac running High Sierra...

iCloud ...

Looking at previous questions and replies I'm a tad unclear - although thinking I'm pretty much restricted.

I want to only sync specific folders and not my desktop and documents - can I do this?

or

Can I sync my documents folder but not my desktop or folders on my desktop?

Any constructive comments appreciated!
