how do I stop apps from loading on my Mac during startup?

System Preferences, Users & Groups, Login Items.

starting up in Safe Mode

Also check under System Preferences / Users & Groups and then Login Items.

If there is something there you don't want to start. Select it and press "-" and it will be removed.
