Files App opens excel files in Google Sheets

Using the Files App, double tapping an excel file launches Google Sheets, not Excel. Using the Share sheet, I am able to copy the file to Excel. Is there any way to define the default app to launch for each file type?

From what I've seen and read on these forums, it would appear the temporary solution would be to remove the Google app.
