MacBook Pro 2016 causing external HDDs to stop ...

I'm facing a strange issue I've never faced before. I recently bought a WD 4TB HDD, Formatted it to Exfat to work cross-platform and loaded it up with a bunch of data. While using the drive a couple of days later, it randomly ejected, after which it stopped working on ALL Mac computers, but mysteriously worked on Windows computers. the funny thing was, in terminal the disk was still discoverable, but was unable to mount/unmount - displaying the message : "Volume timed out while waiting to mount/unmount". The disk remained undiscoverable and inaccessible on ALL Macs with varying OS versions, but was discoverable on Windows PCs.
Having thought this is a hardware defect, I managed to replace the HDD from the vendor from which I bought the HDD was he was nice enough to transfer my data to the new replacement HDD - this time a Seagate 4TB HDD formatted to Exfat. Weirdly, the same thing has happened! The disk has just randomly been ejected and the drive is not discoverable on my Mac anymore, while being discoverable through terminal! It is again not responding to commands and not able to mount/unmount and none of my information is accessible!
In both cases the external drive does not show up in the Disk Utility app unless you shut down and start up the Mac with the HDD plugged in.
I'm not sure whether this is a common problem with Exfat formatted drives, I've never had a problem with that I'm my life. I've been using a 2TH HDD with a 500GB MacOS and 1.5TB Exfat partitions running for years without a problem on multiple Macs.
I've used a different USB 3.0 to USB-c adapters with the different HDDs - an unbranded cheap one with the first WD HDD and the the same issue persisted when using a HooToo Shuttle with the second Seagate HDD.
Anyways, any possible help as to why this is happening or how to stop it happening will be very helpful and greatly appreciated!

When entering "diskutil list" on terminal: (It shows the 4TB HDD)
