Restore iPhone with v12.7

Updated to iTunes 12.7 (sadly - big mistake)

If I now restore my iPhone (368 apps) from a backup, do I have to re-install each app individually from the app store using the phone, and how do I restore all the app folders I have prepared?

I can no longer mange my app folders via iTunes....

Surely this is not how it was meant to be?

Please help and explain !
