Mail: How to add font to default list of compos...

In the default Mail client, when composing a new message there's a font menu, which has a default list of useful fonts at the top of the menu.

How can I add a font to that menu, so I don't have to scroll down to find it every time I want it (which is very often)? I want a fixed-width font in that list. And my choice of fixed-width font.

Once I've used a font, it will stay in the short list for that session, but I want to add a font so that it's always there. I don't want this as my default font.
