Make a Sierra Installer Now That High Sierra is...

I use my Macs in a production environment.

I am not ready to upgrade to High Sierra.

If I want to make a USB install disk for Sierra, how can I do that now that High Sierra is the default OS.

I have Sierra on multiple Macs.

Can I boot into recovery mode and then install on a USB stick?
