How can I find out exactly when a certain iTunes gift card have been redeemed?

You can't, there isn't a way of seeing a history of gift redemptions (you can only view purchases on an account)

Great question! It does seem a bit odd that a "user friendly", high-tech company doesn't allow their users to see a full accounting of OUR transactions with OUR iTunes accounts. Often times my account "value" doesn't seem to reflect a recent gift card redemption. But there is no way to check my account to see if all of the gift cards I've redeemed have actually been credited. Apple begins to chip away at my faith in their integrity when they don't allow me to view a full accounting of MY account. Seriously, how difficult would it be to show us a full record of our credits and debits from our iTunes account? The fact that they don't is concerning.

You can see a full record of debits from your account, they show on the account's purchase history, that shows how each item was paid for. If you would like to see a list of gift card redemptions  : https://www.apple.com/feedback/

Thank you for taking my question seriously and sharing your opinion as well!  I've "earned"—by accumulating enough points from online survey apps, et al—my 3 iTunes cards.  I had not doubts with the first two, however, the last one...,  not so much.   I know I redeemed it but remember nothing else.  C''mon, a $25 card!!??  I want to know EXACTLY what apps I purchased via that card—it was like it was here 1 day, but then "poof  gone the next!!  Something's not right here but I can't believe Apple would be responsible for such nefarious ********.  Besides, since we CAN view all our purchases, why can't we view the dates they were purchased!?  I know that it would be so easy to program the ability to view the date along with the item purchased—it's being left out for some reason.  ****, even knowing the date of redemption and date of final purchase would help.  And,  while I'm at it, shouldn't there be money left on all of our cards—no way did our purchases total to the exact amount of each card's value?!!!

Your iTunes account's purchase history shows you the date when you bought  each item, and how items were paid for

When you redeem a card the card is used and empty, it's value is transferred to the iTunes account - so no, there won't be any money left on the card.

You can't view when or where a gift card was redeemed. If it was redeemed onto your account you could try contacting iTunes Support and see if they can tell you when it was redeemed : https://www.apple.com/support/itunes/ww -

They won't be able to tell you if/when it was redeemed onto somebody else's account, nor whose account it was redeemed onto, due to privacy / legal reasons

I want to know when they redemed my card
