Watch not mirroring emails from iPhone

My Series 2 watch is not deleting emails as they are deleted from my iPhone - i have hundreds of 'unread' emails on my watch even though my inboxes on iPhone have only a few emails, all 'read'. I have tried both 'mirror iPhone' and 'custom' settings, to no avail. I am on Watch OS 4.0 and iPhone 11.0.2.
