Using EtreCheck.
I'm interested to know why the Performance shows "Excellent" when I've set it to "Beach Balling" yet when I set it to "Computer SLOW" it only shows "Good".
What should I look for in the "Computer SLOW" chart?

Your comment, Computer Slow, is just a comment. It has nothing to do with what EtreCheck does. The performance report does not really mean anything useful so you can ignore it.
For the report itself, the main things to check are items reported in red. If there are Diagnostics reported at the end, then those may contain helpful information. EtreCheck does not fix anything. It is an information report that may be useful to someone who understands the information and knows what to do about it. What is reported in EtreCheck may have nothing to do with a slow computer.
I would suggest you post the report here with a new post for help and specify exactly with what you need help.

That initial dialog is there for you specify the problem that you are experiencing, from your perspective. One of those initial options is "computer is too slow". Another option is "beach balling", which is a different specific problem.
Then, when EtreCheck runs, it makes its own determination of the performance of the machine. This evaluation is based on how long it takes to run a couple of low-level Apple diagnostic tools. There are a couple of common problems that can result is a slower-than-normal performance measure.
It is certainly possible for an end user to indicate "slow computer" and EtreCheck to then report "excellent". This would mean that the problems the user is experiencing are focused more at the user interaction, or maybe network, level. While EtreCheck is running, it doesn't so much user interaction and doesn't do much web navigation either. If there is a discrepancy like this, it can be a good indicator of exactly where the problem lies.
Because of issues like this, EtreCheck is really designed for users to post the entire report. Only by seeing the whole thing can someone make an educated guess about what the problem is. Any particular item in red may or may not have any importance. It is the entire report that has meaning, not the individual data points - in general.
I am currently working on a new version of EtreCheck that will solve most of these issues. It will clearly indicate which problems are major and which are minor. Major problems are (or will be) those that appear to be linked to the problem you are experiencing. Minor problems will be other issues that should probably be noticed, but really aren't problems.
It is always a delicate balance about what to report and what to hide. EtreCheck tries to just report everything and let someone here on ASC sort out what it means. Unfortunately, that can be pretty challenging. I'm trying to make it easier for everyone to use and decipher. I hope to have the new version released in a few weeks.
The latest reports I've done today both show "Excellent" (probably because I've recently done a 'Reset PRAM". The one here is from 22nd August:-
