Time Machine and E

I have been using Mail on my MacBook Pro with an e-mail account host for many years.  I recently switched my domain to Google and arranged for Google to handle my e-mail account.  Instead of setting up my e-mail with Google separately, I just changed the server settings in my existing account with the old provider and deleted all my old e-mails.

 

I figured I would do a full restore from Time Machine prior to me changing the e-mail servers and things would be fine.  I initiated the Time Machine restore from Command+R upon power up, selected the backup prior to the changes, & clicked ok.  It looked like about a 4 hour deal so I left for work.  Came home that evening and started up my MacBook Pro and went through some start-ups.  The Mail program was rebuilding and when completed, all my mail from the deleted account appeared..!  Problem solved..? No.  I went to bed and when I awoke this morning, the account was gone again and I was back to the same Mail accounts prior to the restore.  Did I miss something?  Should I have done a Time Machine back-up when I saw everything was restored..?

 

Lastly, I entered Time Machine this morning and selected a date/time prior to me making above any e-mail changes.  I went into Applications and clicked on Mail to see if I could view my e-mails from there.  Just the Mail information banner appeared and the mail program (as I was expecting) didn't launch.  Was the application supposed to launch and I just didn't wait long enough..?

 

I am running Sierra 10.12.6.
