how can I delete apps from my iPad pro? I hold the Ion and it wiggles but no apps show an X.

Some built-in apps can’t be deleted. For example: App Store, Safari, Camer and others.

Now with the iOS 11.0.3 you have to delete apps in settings. Go to setting, then General, then tap iPad storage. There you will see a list of apps. Choose and tap the app you want to delet, then you’ll see you have the option to Offload App or Delete App.
