After troubleshooting, Apple Support said that ...

The Apple support tech I spoke to said that this software is only compatible with MacBook Air, and that the reason I wasn't getting it to work on my MacBook Pro, is because Pro simply doesn't have this feature available to it.

Why does Remote Disc even show up in my Finder? Was the Apple Support tech wrong? Or is this a glaringly unfinished application?

The support article: Use the CD or DVD drive from another computer with your Mac - Apple Support was updated for 2017, and makes no mention of model compatibility, but the software download link provided in the article: DVD or CD Sharing Update 1.0 for Windows clearly states it's for MacBook Air, and is from March 6th, 2008.

Anyone have insight on this?

Why do you need it for a 2017 laptop?

For me, mostly: Importing music, burning CDs/DVDs, writing data CDs, and watching DVDs.

Then buy almost any external USB optical drive. They are not overly expensive. You can buy Apple's USB optical drive for $80, but I think you can buy others for less. Start at OWC.
