mail return address defaults to icloud.com

When I send mail, Apple Mail always wants to send it from xxx@icloud.com. If I don't change it, I won't get a reply because I don't use icloud.com.

How can I control that? I use xxx@mac.com plus a gmail address.

My OS is pretty old (see below). I use Mail.app 6.6.

Can't figure out how to edit my question, so I'll add to it here...

Ical uses the icloud return address, too, for all my calendar alerts, probably due to the above problem. It's not really a problem with the calendar, though as I am not replying to any alerts.
