sketch tool

When I use the sketch tool in Preview, a palette pops up, which gives me the choice of using the squiggle as I have drawn it, or converting it to some recognized smooth shape.  If I later change my mind, how can I get that palette to reappear for a selected sketch?

You don't. You would have to delete the sketch and draw a new one.
